Zucchini Bread Recipe

The whole family loves this modified version of the Zucchini Bread my mom always made (not sure who she got the recipe from). Would love to hear any suggestions to make it even better. Have heard you can also substitute the sugar with applesauce but haven't tried that.

Preheat oven to 350

Mix
3 beaten eggs
1 cup applesauce (instead of oil)
3 tsp Vanilla
3 cups Shredded Zucchini
1 cup Splenda sugar blend (instead of 2 cups of sugar)

Blend in
3 cups flour
1 tsp baking powder
1 tsp salt
1 tsp baking soda
3 tsp cinnamon

Pour into 2 loaf pans
Bake for 50-60 minutes
We cut each loaf into 14 pieces which makes each piece 83 calories each

*have also done mini muffins. It has yielded 93 muffins at 36 calories each. These take a lot less time to cook...like 12 minutes or so if I recall correctly*
